Special Curry Powder 100 g
- Toast the Whole Spices:
- In a dry skillet, toast the coriander seeds, cumin seeds, mustard seeds, fenugreek seeds, black peppercorns, cloves, cardamom seeds, and fennel seeds over medium heat. Stir constantly for about 2-3 minutes until they are fragrant. Be careful not to burn them.
- Cool and Grind:
- Let the toasted spices cool completely. Once cool, grind them into a fine powder using a spice grinder, coffee grinder, or mortar and pestle.
- Mix with Ground Spices:
- In a bowl, combine the freshly ground spice mix with the turmeric powder, ground ginger, ground cinnamon, ground cayenne pepper (if using), and ground nutmeg. Mix well to ensure all the spices are evenly distributed.
